Last Week's Happenings

We have had some exciting things these past few days. I was watching one of my favorite t.v. shows last week and I got some tips on how to make some delicious, low fat food chicken dishes. One of our favorite dishes while we have been here has been coconut chicken however, it is deep fried. We have enjoyed it each time we make it but I am always self conscious of how much I eat since it is deep fried. Last week on Biggest Loser, Rocco gave some tips on how to make deep fried chicken dishes more healthy. So, I tried it out this past week twice and we have enjoyed the Coconut Chicken dish with fewer calories and still a delicious taste!

On Friday since Spring Break officially started Aaron was nice enough to work from home so I could clean up the house for our guest, Samantha to come and stay for the night. Samantha arrived on Friday evening. Since it was already the boy's bedtime we got them off to bed and off Samantha and I went to pick up Sushi at our favorite restaurant! We also watched City of Ember which was a good movie. Saturday we had a delicious breakfast made by chef Aaron. I was excited to have Aaron cook, he even did all the dishes too! (I love Spring Break!) Samantha and I also went shopping! I was able to get Aaron a few shirts. We picked up some Cafe Rio for lunch, which is always delicious! We wanted to be able to get Mateo out for a little bit so since it wasn't too cold we went to get some Aggie ice cream. We wanted Samantha to have a better than BYU creamery ice cream experience. She loved the Aggie blue mint and thinks for some odd reason that the Cougars should take something else away from USU and have Cougar blue mint. I don't think that is ever going to happen though. Aggie ice cream is the best ever and no one can top USU's ice cream.



We have also been fish sitting for our neighbors and are enjoying every minute of it. Jacob loves the fish and every time he sees it smiles and points at it. The boy's have their assigned times to feed the fish and love the responsibility. The fish has been easy entertainment for Jacob every time we sit him down at the table.

Church was interesting yesterday. Since Mateo has not been to church in more than six weeks and somehow it has been so long that he has gone to Primary, he suddenly forgot that he is in Sunbeams and started crying because he wasn't going to Nursery and was too scared to stay by himself. He cried so much that they brought him to us during Sunday School. So instead of one child (Jacob in class with us), we has two kids to entertain for the three hours of church. We also had the first experience of having Mateo in a public place where his hearing loss is evident. I kept telling him to whisper and listen to the lesson, he finally said very frustrated, but mom I can't hear your teacher. Poor Mateo can't hear as well as he use to and we noticed that yesterday.

Last night we had some more fun and were able to celebrate our friend Brian's birthday! Happy Birthday Brian! We enjoyed a delicious cake, ice cream and good company. We also met a couple that is in our ward (who has been trying to connect with Aaron and talk to him about Vicksburg and Waterways to find out what he does, never realizing that we were in the same ward until last night.) They are looking into coming to Vicksburg as summer interns at Waterways. We are so excited and hope they decide to come. Too bad we will still be in Logan. We know our Vicksburg friends will take care of them though!

What a fun weekend! It's great having visitors. That's neat you met a family going to Vicksburg! Hopefully they'll stick around there for awhile!

I'm so jealous that you got to hang out with Samantha! It sounds like you've had a very busy and fun time! I'm glad to hear that Mateo is back to normal life, but I'm so sorry about his hearing loss. I hope he readjusts to everything soon and gets used to the whole Sunbeam thing again. It's quite an adjustment in the first place!
